This cookery class has been canceled due to health issues

Stephanie Holland, chatelaine at Château du Ludaix in Marcillat en Combrailles is inviting you to take part in a cookery class to be held from Thursday May 10th until Sunday May 14th. at her romantic Château.

Below you will find details about the workshops constituting the course, as well as instructions on how to register. .

Basics

  • Participants will stay in private, romantic, en suite rooms at the Chàteau.
  • Breakfast and dinner will be served in the château´s formal dining room. Lunch will be provided in the form of a pick-nick which participants can take as desired at the château or ´en route´.

  • The afternoon workshops will be held in the kitchens at the château by Stephanie Holland, host and chef at Château du Ludaix and Jacco Scheper, chef at Le cuisinier en Combraille. The language of the course is English, with supporting explications in Dutch and French if needed.
  • The day program includes guided visits to off site locations such as local markets, production sites or other sites of interest. Transportation to these off site locations is not included, and should be provided for by the course participant.

    Day 1, May 10th. 2017 – Arrival

  • 4 PM – 7 PM Participants arriving at the Château, room allocation.
  • 7:30 PM Wellcome with champaign and hors d´oeuvre in the library.
  • 8 PM Formal welcome dinner in the Château´s Grand Dining Room, with a wine arrangement of specially choosen French wines.
  • 9:30 PM Coffee or tea and friandises
  • Day 2, May 11th. 2017 – Fish

  • 8 AM – 10:30 AM Breakfast.
  • 11 AM Distribution Luncheon Pick-nick baskets and Departure for trout fishing at Domaine de Baudry, St. Hilaire près Pionsat.
  • 3 PM – Workshop trout cleaning at the Château. (Participation optional)
  • 4 PM – Chef ´s meeting: distribution of the aprons, distribution and discussion of the menu, division into groups, responsibilities, discussion of the proposed wine arrangement.
  • 4:30 PM – 7 PM Cookery workshop in one of the château´s kitchens. Setting the table in the Château ´s Grand Dining Room.
  • 7:30 PM Four course dinner with each team serving their dishes in turn. House wine included, optional special wine arrangement available.
  • Approx. 9:30 PM Coffee or tea and friandises
  • Day 3, May 12th. 2017 – Oil

  • 9:30 AM Distribution Luncheon Pick-nick baskets and Departure for visit and guided tour at the artisanal oil press production at Blot L´Eglise. (subject to availability)
  • 4 PM – Chef ´s meeting: distribution and discussion of the menu, division into groups, responsibilities, discussion of the proposed wine arrangement.
  • 4:30 PM – 7 PM Cookery workshop in one of the château´s kitchens. Setting the table in the Château ´s Grand Dining Room.
  • 7:30 PM Four course dinner with each team serving their dishes in turn. House wine included, optional special wine arrangement available.

  • 9:30 AM Distribution Luncheon Pick-nick baskets and Departure for Visit to the covered food market at Saint Eloy les Mines, where we will decide which ingredients to buy for the evening meal.
  • 4 PM – Chef ´s meeting: distribution and discussion of the menu, division into groups, responsibilities, discussion of the proposed wine arrangement. Group photo.
  • 4:30 PM – 7 PM Cookery workshop in one of the château´s kitchens. Setting the table in the Château ´s Grand Dining Room.
  • 7:30 PM Four course dinner with each team serving their dishes in turn. House wine included, optional special wine arrangement available.

  • Day 5, May 14th. 2017 – Departure

    Rates and Conditions of participation

  • Rate 1 (one participant, single room): € 759,- or GBP 669,-
  • Rate 2 (2 participants, friends or partners, subscribing at the same time and sharing a double room) € 649,- p.p.
  • rate 3 (1 participant, one non participating partner, subscribing at the same time and sharing a double room) € 1.259 in total. (non-Participant taking part in Breakfast, Luncheon and Dinner.)
  • Not included: transportation.
  • Total number of participants: Minimal 6 – Maximal 12.
  • Payment: 50% at booking, 50% at arrival.
  • Extra´s: Optional wine arrangement of 4 chosen wines @ € 22,50 on days 2, 3 and 4.
  • Around the 1st of May, we will send you an E-mail, asking you to answer 4 questions. Your answer will help us to better tune the workshop´s contents to wishes of the participants.
  • Registration and cancellation

    Registration and cancellation

  • Please use the contact form to register. Please include telephone number and postal address details.
  • Note: As long as the minimal number of participants is not reached you will be taken down as ´interested´, without any obligation.
  • When the minimal number of participants has been reached you will be asked to book your participation and we will ask you to pay 50% participation fee. This fee will be fully refunded in the event of an unforeseen cancellation of the cookery class.
  • Registered Participants can cancel up to April 26th. and will be charged a 10% registration fee.
  • Cancellations from April 26th. 2017 will be charged at 50% of Participation fee. We encourage you to take a cancellation insurance to cover your risk.
